Leek and potato vichyssoise is great for unbearably hot days. The soup contains leak greens and is especially delicious when topped with yogurt or cream.

Strawberry, watermelon and basil gazpacho is a quick soup that takes just a few minutes to make and includes basil, lime juice and jalapeno with strawberry, watermelon and mint.

Cool minty peach soup is paleo and gluten-free is especially good when you can get fresh peaches. The recipe also calls for mint, stevia, and coconut yogurt.
