Refreshing Vegan Soups Perfect For Summer

With summer getting off to a hot start, these healthy, refreshingly chill soups are the perfect way to cool off. Some of them don’t even require you to turn on the oven or stove.

Cucumber avocado gazpacho is a variation of the traditional Spanish gazpacho soup and only takes 10 minutes to make. All you need is cucumber, celery, onion, garlic, oil, vinegar, fresh herbs and a blender.

Strawberry, watermelon and basil gazpacho is a quick soup that takes just a few minutes to make and includes basil, lime juice and jalapeno with strawberry, watermelon and mint.

Cool minty peach soup is paleo and gluten-free is especially good when you can get fresh peaches. The recipe also calls for mint, stevia, and coconut yogurt.

Cold corn chowder is a great way to use leftover corn cobs to make stock. Add that to sautéed ginger, garlic, potatoes, celery, carrots and more corn blended with coconut milk and lime juice.
